Here we take our coffee very seriously and devote near-religious levels of obsession to our beans and brewing methods. Whether we are making coffee or simply working on to improve our techniques you always find us measuring, calibrating, sampling, cupping, tweaking & tasting and that shows right there in your cup.
We don't claim to be saints but take pride in trying to involve our local businesses for products and services. Carefully select our roasting partners that pays importance to sourcing ethically & environmentally sound beans.
We are a group of people who love to share this beautiful craft and respect for the coffee,has a palate for quality and a relish for fun that make us a rocking team. Finally to all of our coffee aficionados and crazed passionate people, our door is always open for sharing, brewing techniques, great beans discussions and new ideas. Here we keep no secrets.
Siphon
Perhaps one of the most interesting and visually arresting ways to produce brewed coffee. The siphon bar features halogen burners, onto which water in round glass pots, which look very much like fat beakers. Once the water is heated, a second pot containing coffee is placed on top, and water vapor forces the heated water into the grounds Since the coffee and grounds are mixed together, the resultant “sludge” must be siphoned back into one of the round beaker like pots
in order to create this perfect brew.
Pourover
Pour over coffee, also known as hand drip coffee, is an old-fashioned technique that requires a special kind of kettle that has a narrow spout for precise stream,a special kind of carafe, fresh beans,and the patience to watch as small amounts of water work their way through the grounds. But the results,is one rewarding cup.
Chemex
This is another old fashioned technique that was invented in 1942 by American chemist Peter Schlumbohm. Chemex is an excellent coffee brewing method is similar to drip coffee in terms of body and taste where temperature and soak time make a world of difference. Chemex
filters are thicker than those used by other pour over methods. The result is a slower brew and a richer cup of coffee.

EL PILAR (Guatemala)
The history of El Pilar begins in the 1800s prior to the rise of coffee production as an important part of Guatemala’s economy in the 1850’s. The El Pilar farm is located in the high mountains of San Juan Sacatepéquez with elevations between 1500-2000 meters. Although the farm has changed ownership a few times over the past couple of centuries, the current owner, Juan Chen, has made it a point to preserve historical methods while introducing new techniques in the processing.
El Pilar has maintained the original varieties introduced to Guatemala including Typica and Bourbon. Many of the trees that make up this lot have been growing for over 70 years. Although these varieties can be more challenging to grow, the old trees (some so tall they need a ladder to be harvested), contribute to the unique flavor profile seen in this coffee. Over the past few years, Chen has made some adjustments to his processing techniques in order to better present the coffee. We are looking forward to sharing this unique, complex, and historically rich coffee with you this season.
REKO
Like many excellent coffees, what really separates Reko from the others is in the details. The first thing we noticed was the pride the team at Reko took in their product. The specific care taken when evaluating the fermentation tanks, the strenuous effort placed into the washing, and the precision used at the drying tables demonstrate their passion for their work. All along, the workers were smiling, often singing and chanting as they processed the coffee. The team at Reko has a lot to be proud of as they continue to produce such a special coffee year after year. In 2015 our Reko was a Good Food Award winner, and we’ve secured a large amount of Reko this season and expect to have it around through 2016.
SANTA LUCIA
The harvesting and processing methods at Santa Lucia are precise in that their coffee is divided into micro-lots and carefully separated while the cherries are still on the tree. Ricardo, the owner of Santa Lucia, has a great understanding of the effects that pulping, fermentation, and the drying process have on the coffee. His willingness to work closely with buyers, coupled with his skills as a processor, allow him to present incredible coffees.
The Perez family has been growing coffee for generations. Like many farmers in the world, making ends meet was difficult work and nearly impossible for a long time. In 2004, Ricardo became one of the founding members of the “Micro-mill revolution” that changed the face of Costa Rican coffee production.
In the early 2000s, coffee production was primarily controlled by the cooperatives. This changed once a handful of farmers, such as Ricardo, each put a small mill on their property. They kept their coffee separated and individual farmers were then able to share the unique nuance and flavor from their specific plot. Coffee buyers fell in love and started paying premiums. Over the years their business grow successfully and sustainable as their award winning coffee is shipped across the world.
